In 2018, I entered my Mai Tai Suissesse recipe into the USBG Cocktail Classique contest sponsored by Lucid Absinthe. The drink made it to the New York semi-finals, but scheduling conflicts prevented me from attending. My concept started with the idea that Tiki cocktails pair well with absinthe. Rather than replacing a rum in a Mai Tai with pure absinthe, I decided to use an Absinthe Suissesse instead of one of the rums. This choice was driven by the shared orgeat ingredient and my belief that the creamy, nutty, citrusy, and grassy profile would enhance the herbal spice notes in the absinthe.
