Back in the mid-2000s, before diving into books by Vic Bergeron and Beachbum Berry for tiki drink recipes, I was experimenting with my own "Mai Tai" variations. This is one of my favorites, which friends enjoy. The homemade orgeat stands out as a key ingredient, adding depth and complexity to the cocktail. Over time, I've tried various rums, but Real McCoy really shines in this mix despite its playful name.

- Combine all ingredients except for the Goslings in a shaker filled with plenty of crushed ice.
- Shake well.
- Pour directly into a large tiki mug without straining.
- Float a layer of Gosling's on top for those seeking an extra kick.
- Decorate with a generous sprig of fresh mint, and optionally, add a cocktail umbrella and straw if desired.
