- Chill a highball glass and keep it empty.
- Add everything except the club soda to a shaker with ice and shake until cold.
- Strain into the empty half of the shaker, leaving the ice behind, and shake again without ice to whip up the egg white and yogurt.
- Hold the glass in one hand and strain the drink into it while pouring the club soda with the other, so the two meet in one stream.
- Garnish with a lemon zest twist.
