Robert Hess created this variation, which he prefers over the original in the Savoy. It includes: 1 teaspoon powdered sugar, the white of one egg, juice from a quarter lemon, a quarter ounce crème yvette, and three-quarters of an ounce dry gin. Hess’s version is less sweet and features violette for a delicate floral note.
