Eagle Creek

Stir Scotch, Zirbenz Stone Pine Liqueur, Sweet Vermouth, Angostura Bitters with ice. Strain into a rocks glass.

In 2017, I created my initial version of the Eagle Creek cocktail using an infusion made from a noble fir cone collected during my first backpacking trip with my future wife along the stunning Eagle Creek trail in the Columbia River Gorge. That same year, we all grieved as the devastating Eagle Creek fire ravaged 50,000 acres of cherished forest and showered us with ash for weeks on end. The original name I had chosen, "Forest Fire," felt inappropriate, so I stopped making it entirely. In early 2021, when the trail reopened to hikers temporarily, I revisited this drink, made some adjustments (replacing the lost infusion with Zirbenz), and renamed it as a tribute to both the former splendor and ongoing rejuvenation of that cherished landscape.
