Instructions

  1. Fill a rocks glass with ice.
  2. Add the lime juice, tequila blanco and agave syrup to a shaker with ice and shake.
  3. Fine strain into the ice-filled glass.
  4. Spoon or spray the cucumber foam over the top.
  5. Cucumber foam:
  6. Make a sugar syrup from equal weights of sugar and water.
  7. Measure out the same volume of cucumber juice, egg white and that syrup, and pour them into a cream whipper until it is about two-thirds full.
  8. Seal it, charge with two CO2 cartridges and keep it in the fridge until the drink is made.
