Joaquín Simó crafted this delightful variation of the Diamondback when I asked for a stirred cocktail using Clear Creek pear brandy. Even though only a small amount is used, the pear flavor shines through. Joaquín selected Calle 23 Reposado because its floral notes complement the brandy nicely; meanwhile, its earthiness anchors the drink's fruity profile.
