- Clock Out is a floral stirred cocktail on lavender-infused gin and chamomile-infused pisco, rounded with Midori, Suze and a drop of saline.
- Stir 2 oz (59 ml) lavender-infused gin (Conniption Kinship), 1 oz (30 ml) chamomile-infused pisco (Barsol), 0.5 oz (15 ml) melon liqueur (Midori), 0.5 oz (15 ml) gentian liqueur (Suze), 2 dashes Crude "Bitterless Marriage" bitters and 1 drop saline with ice.
- Strain into the chilled glass.
- Garnish with green candied star fruit.

- — Chamomile-infused pisco — infused spirit
- Steep dried chamomile flowers in Barsol pisco for approximately 1.5 hours, then strain. (Used at a 3:1 ratio with Midori in development.)
- — Lavender-infused gin — rapid infusion
- Rapidly infuse lavender into butterfly pea flower-finished gin (Conniption Kinship) using a whipped-cream maker with N2O cartridges.
- — Green candied star fruit — garnish
- Simmer star fruit slices with blue curaçao and colored liqueurs; extended heating darkens the fruit to an emerald hue.
