Instructions

  1. Stir the rum, black tea, lemon juice and simple syrup together in a jug or shaker.
  2. Heat the cream in a small pan until it is just short of boiling.
  3. Pour the hot cream into the rum mixture and stir well.
  4. Leave to rest for at least 30 minutes.
  5. Strain through a fine sieve or a coffee filter to remove all the solids.
  6. Chill the clarified punch in the fridge, then pour into a rocks glass.
