I aimed to craft a savory Gibson martini with thyme liqueur. My initial attempt featured dry vermouth (Noilly Prat) and was overly dry, plus it had too much thyme and celery bitters that felt out of place. I refined the recipe by reducing both the thyme and vermouth, opting for Comoz instead of Dolin Blanc or Italian bianco vermouths due to its drier profile despite being sweeter.
