AdInstructions
- Chill a Nick & Nora glass and place the pickled onion wedge in it.
- Stir the onion brine, mezcal and vermouth bianco with ice in a mixing glass until cold.
- Strain into the prepared glass.
- Pickled spring onions
- Wash a bunch of spring onions well and trim off all the green tops with a knife. Slice the onions into wedges, leaving the root end intact so they hold together. Pack them into a sanitised jar or a large food-safe container.
- In a pot, mix 60 percent water with 40 percent champagne vinegar, in a batch size that suits you. Weigh the liquid and add sugar equal to 5 percent of its weight and salt equal to 3 percent. Add a few bay leaves, 1 tablespoon of black peppercorns and 1 tablespoon of coriander seeds. Bring to a boil, whisking until the sugar dissolves.
- As soon as it boils, take the pot off the heat and pour the brine over the onions until they are covered. Put the lid on and let it cool. Keeps in the fridge for up to 1 month.
