- Combine the crème de banane, añejo rum, bourbon, dry sherry and yuzu juice in a mixing bowl.
- Heat the milk on the stove or in the microwave until it simmers without boiling. It should curdle.
- Pour the hot milk into the bowl and leave it to stand for 30 minutes or longer. The yuzu and sherry keep curdling the milk, and the liquid clears over time.
- Filter through a coffee filter until the liquid is clear and yellowish. For extra clarity, filter once more through the curds left from the first pass.
- Stir in the gomme syrup.
- Serve in a rocks glass over one large ice cube and stir briefly to chill.
