Instructions

Combine the initial ingredients in a mixing bowl. Warm up the kefir on the stove or microwave until it simmers but doesn’t boil. Curdling is desired during this step. Pour the heated kefir into the mixture and let it rest for at least half an hour. The citrus juice and sherry will further curdle the kefir, enhancing clarity over time. Strain the cocktail through a coffee filter to achieve a clear, yellowish liquid. For extra clarity, re-filter using the curds from the first filtration. Mix in the ube syrup thoroughly. Serve by pouring into a rocks glass with a large ice cube and stir to chill.
