Instructions

  1. Chill a rocks glass.
  2. Add the rhum agricole, green Chartreuse, demerara syrup and Angostura Bitters to a mixing glass filled with ice.
  3. Stir until well chilled.
  4. Strain into the rocks glass.
  5. Cut a coin-sized disc of lime peel and carefully remove the pith. Float the peel on the surface of the drink like a small boat.
  6. Add 5 drops of white overproof Jamaican rum to the peel and light it with a match. Wait until the flame has burnt out before taking a sip.
