Instructions

  1. Add the simple syrup, Suze, mezcal, lemon juice, egg white and Poire William to a shaker with ice.
  2. Shake hard until well chilled, then strain the liquid back into the shaker, discarding the ice.
  3. Shake again without ice to build a dense foam.
  4. Fill a rocks glass with fresh ice and strain the drink into it.
  5. Garnish with a dehydrated pear slice.
