Instructions

  1. Shake the lemon juice, Skinos Mastiha, simple syrup and egg white hard with ice.
  2. Strain the drink back into the shaker, leaving the ice behind.
  3. Shake again without ice to build the foam.
  4. Fill a rocks glass with fresh ice and strain the drink over it.
  5. Garnish with orange or lemon zest.
