Mark's Chicago Fizz
0
A tall, foamy fizz where the dark fruit of port meets lemon and white rum. The egg white gives it a thick, creamy head and the club soda keeps it light.

AdInstructions
- Chill a highball glass and leave it empty, with no ice.
- Shake the port wine, lemon juice, white rum, egg white and simple syrup with ice, then strain the drink back into the shaker.
- Shake again without ice until the egg white is thick and frothy.
- Hold the shaker high and pour about two thirds into the glass in a thin stream. At the same time, pour the club soda with your other hand so the two fall together as a single stream.
- Let the glass rest for at least a minute so the foam can settle, ideally in a freezer or fridge.
- Pour in what is left in the shaker so the foam builds up on top. Garnish with a quarter lemon wheel on the rim.
