Instructions

  1. Chill a highball glass and leave it free of ice.
  2. Shake everything except the club soda with ice, then strain the liquid back into the empty shaker.
  3. Shake once more without ice to whip up the egg white, then fine strain into the glass.
  4. Pour in the club soda slowly from a height so a thick, foamy head builds on top.
  5. Twist a lemon zest over the drink and discard it. Garnish with a lemon wedge and a Luxardo maraschino cherry, and serve with a straw.
