- Chill a rocks glass.
- Add gin, pisco, peach liqueur, lemon juice, rich sugar syrup, orange bitters and egg white to a shaker.
- Shake hard without ice to emulsify the egg white.
- Add ice and shake again until well chilled.
- Strain into the rocks glass.
- Garnish with a lemon zest twist and mint sprigs.
