A silky, foamy sour built on vodka, with Suze's bitter gentian and dry vermouth cutting through grapefruit and a little sugar. Peychaud's bitters add an aniseed-and-cherry note over the foam.

- Chill a coupe.
- Shake vodka, Suze, dry vermouth, grapefruit juice, simple syrup, egg white and Peychaud's bitters hard with ice.
- Strain the drink back into the empty shaker and discard the ice.
- Shake again without ice until the egg white has built up a thick foam.
- Fine strain into the chilled coupe.
- Twist a piece of pink grapefruit zest over the drink and discard it. Dot three spots of Peychaud's bitters on the foam and draw them through the head.
