Inspired by colonial-era 'flips' that featured whole eggs, strong ale, and diverse spices, heated with a fire poker and mixed between heavy mugs, often served with bread for sustenance, I aimed to create a more contemporary version. The result is the Black Rainbow—a refreshing twist on tradition, minus the burnt taste and added grossness. Your turn to innovate!

Instructions

  1. Fill a rocks glass with stout.
  2. Dry shake rye whiskey and egg white together.
  3. Add crushed ice and hard shake for about 45 seconds.
  4. Float honey ginger egg foam on top using a bar spoon, starting slowly to create the middle layer.
  5. Decorate the drink by dropping chickory bitters onto its surface in a star, hexagon, or triangle shape; avoid forming a smiley face.
