Instructions

  1. Halve the passion fruit and scoop the pulp into a highball glass.
  2. Add the mint sprigs and muddle lightly, just enough to release their aroma without tearing them up.
  3. Add white rum, lime juice and simple syrup, then fill the glass with crushed ice.
  4. Stir with a bar spoon, lifting from the bottom, until everything is mixed and cold.
  5. Drizzle Passoã over the top.
  6. Garnish with passion fruit and a mint sprig, and serve with straws.
