An alcohol-free approximation of the classic Paloma.

The Paloma is widely credited to Don Javier Delgado Corona, the long-time bartender at La Capilla cantina in the town of Tequila, Mexico — although the drink predates his appearance there in the 1950s and 60s. The IBA added it to the Contemporary Classics list. Mexican home-style is built with Squirt soda over plenty of ice; bar versions use fresh juice and a quality soda to dial up the grapefruit character.

Instructions

  1. Fill a highball glass two-thirds full with ice.
  2. Slowly pour in about 2 oz. grapefruit soda, filling glass about one-third full.
  3. Add 1½ oz. Lyre's Agave Blanco, ½ oz. lime juice, ¼ oz. grapefruit juice, and a pinch of kosher salt. (Rebalance hint: Adjust sweetness to taste)
  4. Top with remaining grapefruit soda, stir gently, and garnish with a grapefruit wedge or slice.
  5. A non-alcoholic approximation of the Paloma.
