Stir Gin, Amaro, Aperol, Sweet Vermouth with ice. Strain into a rocks glass.

Inspired by Jake Parrott's comment on Instagram about the traditional 50:50 mix of rabarbaro and red bitter being common in Venetian cafes, I experimented with Sfumato and Aperol in a classic Negroni. This led to the creation of the Veneto Negroni, avoiding the playful name Mezzo-Mezgroni.

Instructions

Mix over ice, then pour through a strainer into an Old Fashioned glass filled with ice. Finish by twisting a piece of grapefruit peel over the drink.
