The Valencia Cobbler draws inspiration from the stunning Port of Valencia. La Tomatina, a famous festival in Buñol, a town east of Spain by the Mediterranean, sees participants throwing tomatoes for fun. This tomato-throwing event started in 1945 and happens every last Wednesday of August during Buñol's week-long festivities. Cheers!

Instructions

  1. Begin by mashing cherry tomatoes at the bottom of your mixing vessel.
  2. Then, incorporate all remaining ingredients along with plenty of ice cubes.
  3. Vigorously agitate until well-chilled and thoroughly mixed.
  4. Next, pour the mixture through a fine mesh strainer into either a Cobbler glass, Wine glass, or Water Goblet, depending on preference.
  5. Top off with crushed ice.
  6. For garnish, slice an orange wedge in half, halve a cherry tomato, include a celery stick, and flame a sprig of rosemary before adding it to the rim.
  7. Serve alongside Iberico for an enhanced umami flavor profile.
  8. Enjoy your drink!
