The Ume Klug was created spontaneously at Michael McAvenas’s home using homemade sake in 2009 and eventually made it to the menu at Blackbird in 2013.

45 ml
Tanqueray/Plymouth work too
1 sli
Coin sized muddling slice
🌱 Vegan🌾 Gluten-free🍷 Contains sulphites

Instructions

  1. Combine the ingredients in a shaker.
  2. Cut a plum into quarters and extract its juice by squeezing one piece into the mixture.
  3. Include five big ice cubes, then shake vigorously.
  4. Pour the drink over the top without ice.
  5. Optionally, double strain before serving.
