Instructions

  1. Sprinkle a baker’s pinch of salt into a rocks glass.
  2. Mix in Cynar and stir gently.
  3. Add Punt e Mes, bitters, lemon juice, and ice cubes.
  4. Stir briefly to combine.
  5. Taste the mixture for just a hint of saltiness; if it tastes too salty, discard and start over with less salt.
  6. Once the salt is right, twist five pieces of lemon peel over the drink’s surface and drop one into the glass, skin side inward.
  7. For an 1/8-inch rim of salt, let guests experience a few salty sips.
  8. The subsequent sips should be sweet without overwhelming your palate.
