Instructions

  1. Champagne foam (make a day ahead)
  2. Leave orange zests to macerate in champagne overnight.
  3. Add gelatin to the infused champagne.
  4. Fill a siphon with the mixture and charge it with N2O.
  5. Cocktail
  6. Chill a martini glass.
  7. Shake the white rum, simple syrup, Campari, dry vermouth, Angostura bitters, Triple Sec, cognac, dry sherry, Velvet Falernum, lime juice and orange bitters with ice.
  8. Fine strain into the chilled glass.
  9. Float the champagne foam on top.
