Instructions

  1. Chill a coupe glass.
  2. Add the gin, simple syrup, yellow Chartreuse, celery bitters, lemon juice and egg white to a shaker with ice and shake.
  3. Strain the drink back into the empty shaker, leaving the ice behind.
  4. Shake again, this time without ice, to build the foam.
  5. Fine strain into the chilled coupe.
  6. Garnish with a lemon zest twist.
