I developed the Pigeon Park cocktail as an adaptation of the Vancouver Cocktail but ended up veering off course with the inclusion of Pimm's No.1. I aimed for an herbal undertone to complement the subtle herbaceousness of mezcal, and Pimm's seemed ideal due to its low sweetness and gin base, mirroring the original drink’s Martinez roots with Benedictine instead of maraschino. Pigeon Park is a small square in Vancouver’s Downtown Eastside where homeless individuals and drug users often gather or rest. Despite not being picturesque, it retains a certain charm that reflects the city's gritty reality.
