Instructions

  1. Put the kumquats and mint in a shaker and muddle them to release the juice and oils.
  2. Add ice, then the spiced rum, flavoured rum, pineapple juice, coconut cream and coconut milk.
  3. Shake well until cold.
  4. Fill a highball glass with crushed ice and strain the drink over it.
  5. Garnish with mint and pineapple leaves.
