Crack the chiltepin pepper in a shaker and muddle it. Then add the remaining ingredients except for the allspice dram and shake vigorously. Pass the mixture through a double strainer into an Allspice Dram-cooled glass.
For the pear nectar: chop 6 cups of Bartlett pears, mix with 1 cup brown sugar and a teaspoon of salt in a pressure cooker until done. Strain to separate the juice from the solids.
