I was aiming to make a Negroni dell'Etna but ended up using Erborista by mistake instead of another ingredient. Since it was a variation, I adjusted the name accordingly. The Erborista brings in notes of pipe tobacco and sandalwood along with an umami flavor. Initially bitter from both Campari and the pine elements of Erborista, it evolves into a rhubarb-like umami taste before concluding with a strong bitterness. This twist adds depth to the classic Negroni formula.

Instructions

  3. Squeeze a twist of grapefruit peel over the top and use it as a garnish.
