On a night dedicated to Whiskey & Amari with a Women of the Wild West theme, Katie Emmerson from the Hawthorne and I crafted nine drinks for the Spaghetti Western movie marathon. Matt Schrage, who organized the event and happened to have his birthday that evening, asked us to create a special Scaffa cocktail in celebration. Scaffas are traditional room-temperature concoctions that fit the 1806 definition of cocktails if they included water or ice. Since we hadn't come up with a rum-based drink yet, I decided to explore this route. Cynar and agricole worked well together, while Drambuie added body and sweetness to balance out the alcohol's heat without chilling. I named our creation after Eleanore Dumont, a legendary Wild West figure known for her mustache, which she kept as a unique selling point at her brothel.
