Shookd's version of Lingon Sour med Tomteskum, a Swedish-inspired cocktail.

Instructions

  1. **Gnome Foam Preparation:**
  2. Heat 2 dl of sugar with 3 dl of water in a pot until dissolved
  3. Once the sugar dissolves completely, stir in one 100g packet of Christmas foam pieces until fully melted
  4. Allow to cool completely, then transfer into a siphon bottle
  5. Load with a cartridge and shake firmly. Unload and insert a second cartridge, then shake again
  6. Store at room temperature if needed, but refrigerating for about an hour before serving gives the foam better structure. However, prolonged chilling may cause the foam to firm up
  7. **Lingon Sugar Syrup Preparation:**
  8. Heat 1 dl of sugar with 1 dl of water in a pot until the sugar dissolves
  9. Stir in 1 dl of frozen lingonberries and 2 cinnamon sticks
  10. Bring to a boil, then move off the heat and allow to cool
  11. Strain through a sieve into a bottle, pressing the berries firmly to release all their liquid
  12. Store in the refrigerator
  13. **Drink Preparation:**
  14. Pour gin, lingon sugar syrup, and lingon cordial into a shaker (fresh lemon juice can substitute if cordial is unavailable)
  15. Fill with ice and shake until properly chilled
  16. Strain into a coupe glass with a single large ice cube
  17. Top with the gnome foam
  18. Finish by scattering lingonberries across the foam
