Instructions

  1. Chill a cocktail glass.
  2. Add the apple brandy, port wine, egg white and simple syrup to a shaker with ice and shake until cold.
  3. Strain the drink back into the empty shaker, leaving the ice behind.
  4. Shake again without ice to build a thick foam.
  5. Pour through a fine strainer into the chilled glass.
  6. Squeeze an orange zest twist over the drink and discard it, then grate nutmeg on top.
