- Place cilantro sprigs in your mixing vessel and mash them with a pestle to extract their oils.
- Incorporate the rest of the ingredients into this container without ice and agitate vigorously for about 15 seconds to blend the egg white thoroughly.
- Once well mixed, fill the glass with ice cubes and shake once more for five seconds to cool everything down.
- Strain the mixture through a fine mesh sieve into a chilled coupe.
- Decorate by carefully squeezing three individual drops of bitters in succession onto its surface.
- Finally, use a cocktail pick to draw heart shapes beneath each drop of bitters.
