- Infused orgeat
- Put the orgeat in a small bowl or jug with the lime zest and the allspice.
- Warm it briefly in the microwave, which works well for a small batch, and let the flavours infuse.
- Cocktail
- Add the infused orgeat, tequila blanco, gin, lime juice, orange flower water, orange & fig bitters and nutmeg to a shaker.
- Fill with ice and shake until well chilled.
- Double strain into a coupe.
- Garnish with a little freshly grated nutmeg.
