Chill ice cubes and sparkling wine before starting. Use store-bought or homemade elderflower syrup.
Mix elderflower syrup and citrus juice in a pitcher.
Stir in mint leaves, muddling them gently.
Transfer the mixture along with the leaves to two large glasses, such as white wine goblets. For four smaller servings, use flute glasses or champagne coupes instead.
Add ice cubes or crushed ice to each glass.
Pour chilled sparkling wine over the top until full. A 375 ml bottle is sufficient for two large drinks in wine glasses or four small ones. Alternatively, a 30 cl serving works well for two medium-sized servings.
Decorate with thin citrus slices.
