When Shane Sullivan of Oz by Oz in Madison, Wisconsin, served a brief stint as a bartender in Ireland he found that the most ordered cocktail wasn't the Espresso Martini but the French Martini. Once he returned to the States, his mission was to create his own take elevating the cocktail's sweet notes. But he rounds them out with an amaro base, sherry, and lime juice.
