I created the Horny Hornet Club after tasting a dessert at Michalak's bakery in Paris several years back.

Lychee gum syrup, see note
45 ml

Instructions

  1. Place raspberries and lychee gum syrup in a shaker.
  2. Crush them together.
  3. Combine with remaining ingredients, excluding lemon zest.
  4. Perform a dry shake.
  5. Then shake over ice.
  6. Squeeze lemon zest into the mixture.
  7. Double-strain through a fine mesh and second strainer.
