- Hornet is a built champagne cocktail on fig-infused cognac with crème de menthe, a touch of Fernet, and an optional drop of red food dye.
- Build 1.5 oz (45 ml) fig-infused cognac (Gautier VS), 0.25 oz (7.5 ml) crème de menthe (Jacquin's), 1 tsp (5 ml) Fernet-Branca and (optional) 1 drop red food dye in the glass.
- Top with 3 oz (90 ml) champagne (Cook's Brut).
- Garnish with skewered cognac-infused figs and white thread.

- — Fig-infused cognac — infused spirit
- Combine 39.05 g dried black figs with 200 ml cognac; infuse ~48 hours, then strain through a coffee filter.
- — Fig syrup — house syrup (optional companion)
- Blend or juice ripe black figs to a purée; add 1 drop Pectinex Ultra-SPL per 4–5 figs, blitz and rest 2 hours. Strain through fine mesh until clear. Sugar-adjust to ~50° Brix (sugar weight = juice weight × 26 ÷ 50).
