Instructions

  1. Fat-wash the peaty Scotch with smoky bacon fat, then clarify it so the whisky is clear and carries the bacon flavour.
  2. Fill a mixing glass with ice and add the washed Scotch, amaretto and orange bitters.
  3. Stir until well chilled.
  4. Strain into a rocks glass filled with ice.
  5. Garnish with an orange zest twist.
