- Muddle the allspice Jamaica pepper and pineapple in the bottom of a shaker.
- Add the salted caramel syrup, white rum and lime juice, then fill with ice.
- Shake until well chilled.
- Fine strain into the coupe.
- Garnish with a lime pastille with allspice.
