Instructions

  1. Steep one tablespoon white peony tea in one cup of boiling water until cooled.
  2. Make an oleo saccharum by muddling twelve lemon peels in two cups of demerara sugar, resting it until a paste forms.
  3. Quickly add boiling water and stir to blend well.
  4. Allow the mixture to cool.
  5. Combine all ingredients, chill thoroughly, stir gently, and serve with a ladle.
  6. Garnish each serving with lemon thyme sprigs.
  7. Yields four to six servings.
