Instructions

  1. Prepare two things in advance: lemon juice clarified with agar-agar, and a syrup steeped with lemongrass.
  2. Steep kaffir lime leaf and ginger in water, then freeze that water into ice.
  3. Fill a highball glass with the ice.
  4. Pour all the ingredients into a soda siphon, charge it with CO2 and mix thoroughly.
  5. Dispense the drink into the glass.
  6. Garnish with a lemon verbena sprig and a stick of lemongrass.
