- Put a portion of the tequila in a rocks glass with three cubes of hard, dry ice straight from the freezer.
- Stir for a moment, then pour in the agave syrup and drop in two more cubes.
- Stir again. Top up with two further cubes and pour in the remaining tequila.
- Give it a last stir, and if there is room in the glass, fit in a few more cubes.
- Garnish with a lime or orange zest twist.
