Instructions

  1. Chill a highball glass.
  2. Add the gin, dry sherry, lime juice and simple syrup to a shaker with ice.
  3. Shake until the shaker feels cold.
  4. Add the ginger beer to the shaker, then tip the whole drink slowly into the glass over fresh ice.
  5. Garnish with a lime wheel.
