Instructions

  1. Chill the martini glass.
  2. Add egg white, cream, triple sec, gin, simple syrup and blue curaçao to a shaker with ice and shake hard.
  3. Strain the drink back into the shaker so the ice is left behind.
  4. Shake again without ice to build a thick foam.
  5. Double strain into the chilled glass.
  6. Garnish with a physalis on the rim.
