An Old Fashioned made with blanco tequila and a touch of amaretto, where the almond adds a soft sweetness and orange bitters keep it dry. Stirred slowly over plenty of ice, it ends up smooth and well diluted.

- Drop two ice cubes into the glass and stir in a first portion of the Tequila Blanco.
- Stir in the Amaretto and Orange Bitters together with two more ice cubes.
- Keep stirring, then add two more ice cubes and the rest of the Tequila Blanco.
- Continue stirring for a good while until the ice has melted noticeably, then top up with fresh ice.
- Don't rush this part: the slow melting and stirring is what gives the drink its dilution and flavour.
- Garnish with an orange zest twist.
