Instructions

  1. Separate the eggs, keeping the whites aside.
  2. Whisk the yolks together with sugar until light and foamy.
  3. Add the milk and cream, stirring to combine.
  4. Pour into a saucepan and warm gently over low heat while stirring. Use a thermometer to track the temperature—bring it to around 75°C but do not exceed 80°C, as the eggs will scramble.
  5. Once at temperature, remove from heat and immediately place in an ice bath to stop the cooking.
  6. After cooling briefly, pour in the dark rum.
  7. Grate nutmeg over the surface to taste.
  8. In a separate, clean bowl, whip the reserved whites until stiff peaks form.
  9. Gently fold the cream mixture into the whites and combine completely.
  10. Transfer to a bottle or jar and refrigerate until thoroughly cold.
  11. Before serving, shake well, pour into chilled coupes, and top with grated nutmeg.
  12. Variations:
  13. - Warm version: Gently reheat the finished mixture (do not go over 75°C) and serve in a heat-safe glass.
  14. - Spiced version: Include whole spices like cloves, cardamom, and cinnamon during heating, then strain them out before adding the rum.
  15. - Different spirits: Use cognac or whiskey instead of rum, or combine them, adjusted to your taste.
  16. - Alcohol-free: Omit the spirits entirely for a drink suitable for everyone.
