- Separate the eggs, keeping the whites aside.
- Whisk the yolks together with sugar until light and foamy.
- Add the milk and cream, stirring to combine.
- Pour into a saucepan and warm gently over low heat while stirring. Use a thermometer to track the temperature—bring it to around 75°C but do not exceed 80°C, as the eggs will scramble.
- Once at temperature, remove from heat and immediately place in an ice bath to stop the cooking.
- After cooling briefly, pour in the dark rum.
- Grate nutmeg over the surface to taste.
- In a separate, clean bowl, whip the reserved whites until stiff peaks form.
- Gently fold the cream mixture into the whites and combine completely.
- Transfer to a bottle or jar and refrigerate until thoroughly cold.
- Before serving, shake well, pour into chilled coupes, and top with grated nutmeg.
- Variations:
- - Warm version: Gently reheat the finished mixture (do not go over 75°C) and serve in a heat-safe glass.
- - Spiced version: Include whole spices like cloves, cardamom, and cinnamon during heating, then strain them out before adding the rum.
- - Different spirits: Use cognac or whiskey instead of rum, or combine them, adjusted to your taste.
- - Alcohol-free: Omit the spirits entirely for a drink suitable for everyone.
